Potassium metabisulphate calculator
Enter the information required to estimate the amount of Potassium metabisulphate (KMS) needed to inhibit microbial growth.

STEP 1: Enter values in empty fields (within given ranges)

Select type of wine Red or white
Current pH of wine* (2.90 - 4.00)
Current free sulphur dixoide**(mg/L) (0 - 40 mg/l)
Volume of wine (L) (>50 litres)

STEP 2: Click to estimate the KMS addition required

Amount of KMS to be added to winegrams
Increasing the free sulphur dioxide to an estimated mg/l

If the free sulphur dioxide estimated above exceeds 40mg/l an acid adjustment may be required.

STEP 3: Dissolve calculated KMS in warm water. Add half this solution
to the wine, mix well, then re-measure the FSO2. If the increase corresponds to half the required increase, add the remaining solution.
If not, adjust the final addition of KMS solution accordingly. This step
avoids over-addition.

*Requires pH meter
**Requires aspiration test equipment
